I made this up tonight and my word all we did was OooO & Ahhhh about it!

So Legal but tastes like Down Home Comfort Food!

{{Got the coating idea for chicken w- mayo/parmesan from Annie.}} ;)

Here's what I came up with..

~Stacy's Comfort Style Parmesan Chicken.~

This is for 6 big chicken breasts.

In a bowl add 1/2 C. Hellmans Mayo - Sprinkle in lightly{I go from one end of bowl to the other while sprinkling.} these spices:

Garlic Powder, Celery Salt, Pepper, Oregano, & Dried Parsley.
Also add in 1 tsp. basil, 1/8 tsp. of thyme, and 2 tbs. heavy cream.

Mix well with a spoon. Set aside.

In a pie plate/other; Add 1/2 a canister of grated parmesan cheese and a few tbs. of dried parsley. Mix with a fork to rid lumps and make a dusting powder.

I also sprinkled in some pepper.

Pre-Heat Oven to 400* Lightly spray a baking dish with cooking spray.

Baste both sides of chicken breasts with mayo mixture and then dust both sides with Parmesan mixture.
Place on baking dish. Once all of the chicken is on baking dish, cut lil pc. of butter to place around each chicken breast.

Bake uncovered for 25 mins. {Until no longer pink/cooked through.}

So tender and just awesome - savory flavor.

Our side dish. {Not for those on induction; Unless you use something else for dreamfields pasta.}

{Idea from Daddio and I threw in a few things.} ;)

You can't get this taste from a jar!

Spiral Alfredo Pasta. {used dreamfields.}

Start Pasta by directions.

Daddio & Stacy's Alfredo Sauce:

*In a bowl mix 1 C. of Grated Parmesan from canister and a few tbs. of dried parsley together.*

*I mixed spices in a small dry measuring cup for easy sprinkling.

Spices: 1/8 tsp. nutmeg, 1/4 tsp. salt, and 1/8 tsp. white pepper. Stir.

In a pot melt 6 Tbs. butter. Stir well as it bubbles. 1-2 mins.

Add in 1/2 C. heavy cream and stir well over med. hi heat.

Once it comes to a rolling boil and the sauce becomes semi glossy slowly add in some of Parm Mixture & spices..

Stir well for about 1 min.

Add in another 1/2 C. heavy cream, some Parm Mix and some of the spices.

Stir well for 2 mins.

Add in another 1/2 C. heavy cream, rest of parm mix and rest of spices.

Stir well for 2 minutes. Remove from heat.

Drain pasta and then add to sauce and turn to coat well.

Serve.

* I had 1/8 C. of it and it was all I needed. Plenty to enjoy.

* I also made salad with iceburg/romaine mix and tossed in some chopped green onions and radishes.

Sounds delicious! Wish I could find Dreamfields pasta in my area.

Have you been to their site to see if maybe you could order on-line?

What about friends or family that could mail it to you?

lol

My cousin lives in TN and they do not have mexican type foods in any of their stores.

Her mom {here in TX} mails her taco seasoning, tortillas, ect, every 2 months..lol

Tried this recipe and it was fantastic.

Didn't have the heavy cream so I opted to use some Ranch Dressing instead.

The chicken was very moist and tender, which isn't always the case for boneless and skinless breasts.
