I saw this recipe on tv, tried it, and ate the whole freaking batch they were so good. Also, it's simple to make, and very low carb.
2lbs. chicken
1 tbsp. marjoram
2 eggs
2 cloves garlic
8 oz. heavy cream
put chicken into a food processor, I used a blender, so whatever you have to puree the chicken is good, add in ingredients to chicken as you puree
take this concoction and make little chicken nugget size balls, coat these balls with a mixture of 1/2 cup soy flour and about 2 cups of puverized pork rinds, deep fry them for about 3-4 minutes (for five) at 365 degrees, toss a little popcorn cheese topper onto them and eat till you drop. there is roughly a 1/2 carb per serving, the show didn't specify what a serving is, but looking at all the ingredients the only thing that even has real carbs is the soy flour and it is very minimal. I could not believe how great these tasted and am planning on making them over and over. Enjoy!
