Of course you skip the pasta. My friend on Scrapjazz just sent me this recipe

~Italian Chicken~
4 boneless, skinless chicken breasts
1/2 stick butter or margarine (we omit this and use a drizzle of EVOO instead over the chicken before pouring on the seasonings)
1 8 oz. block cream cheese (room temperature)
1 10.5 oz. can cream of chicken soup
1 envelope dry italian salad dressing mix (we used zesty italian, but you could use regular...I use 2 envelopes, because I like my food a little "jazzy")
Pasta of your choice if desired (cooked and drained) [no way Jose !!

Put the chicken in the bottom of the crock. Melt butter and pour over chicken, then sprinkle the italian dressing packet over the chicken. Cook for 4 hours on high (or you could do it on low for longer...we actually had it in the crock from about 6 am to about 5 pm on low...the chicken was soooo tender).

1/2 hour before eating, remove the chicken from the crock and place it on a plate. Mix the softened cream cheese and the soup into the juice that the chicken made until it is thoroughly mixed and creamy. Put the chicken back in the crock and spoon the creamy mixture over the chicken. Cook for another 1/2
hour. You are supposed to serve it over pasta, (but we shun it right?)

I would think you could actually eliminate the soup and bring the carb count down. Sounds tasty!

OK mine is in the crock pot now and instead of the soup later I am mixing in mayo mixed with chicken base plus the cream cheese. I think you could also use HC with chicken base but I used mayo because it does have vinegar in it and fear that it will be too creamy without that little element of an acid in it.

Can't wait! tick tock tick tock.

Campbell's Cream of Chicken and Mushroom Soup (http://www.campbellwellness.com/product-list.asp?brandID=1&brandCatID=807&productID=2308&catID=294) only has 7.5 carb for the entire can.

They omit 2 ingredients in this soup that is in all the other "cream of" soups that makes the carb difference.....maltodextrin and corn starch.

They omit 2 ingredients in this soup that is in all the other "cream of" soups that makes the carb difference.....maltodextrin and corn starch.

WOW! Thanks for that tip. I would have never known they weren't all the same.

Yes it does include wheat. I just looked on the can.

On my recipe that is similar to this, there is no soup. I make it with the butter, cream cheese and italian dressing mix and it turns out wonderful. I cook pasta on the side for the rest of the family and I have mine with broccoli. It's very good and soo easy! My family really likes it.

I just tasted the sauce and it seemed pretty salty to me, I haven't had dinner yet, just a quick taste. I hope it improves with the chicken added.

I decided to make this with a twist for dinner tonight.
I took 3 lbs of chicken breasts and cut them into one inch wide strips and put them in the crock. I then combined the can of soup with a 14.5 oz can of turkey stock and 1 teaspoon of the dry salad dressing mix and poured it over the chicken. Cooking on low at 8 hours I will serve on a bed of buttered spaghetti squash. Thanks for the idea Lucy! I will let you know how it turns out.

This turned out really well. Very nice creamy flavor. I ended up cutting the chicken into smaller pieces.
