I was wondering if anyone out there eats the SF Jello Pudding? Or if it is good to eat doing LC? Thanks

I know a lot of people eat it, but it is thickened with corn starch and that's not allowed on induction or OWL.

there is several pudding recipes here

http://www.genaw.com/lowcarb/index.html

and you could also make flavored whipped cream which is very close to pudding consistancy and helps fill the fat ratio.

i just made banana whipped cream by putting some heavy cream in a large cup, added in half a scoop of banana whey protein, a couple of drops of sweetzfree, and a drizzle of banana extract. then i used my immersion blender to whip it up really thick. delicious!

you can do the samwe thing with a little cocoa powder and a smidge of sf syrup. you could make virtually any flavor.
