I've had many requests for the recipe in pm's bc they are listed in my J so much.. :lol:

Stacy's Guacamole Burgers

The amounts listed are for 3 people and for also havin' left overs..

Guacamole:
3 large avocadoes/meat scooped out
2 med. sized toms-seeded/chopped small
not quite half a med. yellow onion-diced
1 fresh lime
S & P/Garlic Powder

I use my magic bullet..Since many may not own one, I'll list how to do it by hand.

In a bowl mash avocadoes with a fork. Squeeze a few drops of lime juice in and continue mashing.

Sprinkle lightly w/ S & P and garlic powder.
Add some onions and toms. STIR..

Taste test to see if you need more lime juice/and seasoning.
You may need to add a lil more onions/toms as well. {I do.}

Once creamy place in fridge-covered tightly. *Don't over-season bc as it chills the flavors will come out more.

Burgers: Grill or pan fry { I have to pan fry until we get another grill.}

A little over 2 lbs. ground sirloin
S & P/Garlic Powder/Dried Parsley/A couple of pinches of Cumin/extra virgin olive oil

In a large bowl add all of meat and mash with a tater masher..{This is to get great formed patties!}

Sprinkle in S & P/garlic powder/cumin/some dried parsley.

Mash again.. Form Patties..

Before adding to grill/pan, very lightly baste one side with EVOO..Then lightly sprinkle on top garlic powder.

{This will make a garlic crust!}

We cook ours Medium Well..

Mine are bunless of course{the boys use WG Buns..}

I lightly spread top of garlic crusted burger with mayo and then spread the Guacamole on top. {Boys spread Guac on buns.}

Serve!

I make a veggie tray and we use some guac for veggie dipping.

Veggie Tray - Fresh broccoli tops/sweet red onions/tomatoes/and celery.

Of course I have everything in moderation.
