Awh...I Think I'm In Love...with spaghetti squash that is.
Hey! How come nobody told me this stuff taste so great. I was so apprehensive about trying it and I only did so because I caught it on sale so I bought one and still being apprehensive only nuke about a third of it. What a surprise? I mean I love the way it taste just by itself. Then I tried it with just some butter, parmesan, and Lawry Garlic Powder w/parsley. So yummie. :yum:
Trying to make sure I keep this new lifestyle exciting and interesting by adding new foods and recipes so, this is a keeper for me, gonna go spend some time now in the recipe section see what I can find or if you have a great recipe for spaghetti squash, please, do share. :D

I remember spaghetti squash...it was one of my favorites. When I start adding veggies that will be one of the first, that and broccoli.....just love broccoli.

How did you cook it ? I've tried it before and was disappointed. Maybe you're way is better. Plus: how can you tell you got a ripe one ?

I cut it in 1/2, well, this was less than half, but anyway, I then pierced the skin i with a knife and placed it flesh down on a microwavable plate for 10 minutes (you're suppose to microwave it until the flesh becomes soft). After removing from microwave, I let it sit for about 3 minutes and removed the seeds. Next time I think I will remove the seeds first before microwaving (I think that would be easier). Anyway, afterwards I removed the strands with a fork, put a pat of butter, parmesan, and Lawrys Garlic powder mixed it all up and then chowed down.
I'm not sure how to check for ripeness, I just had the produce guy get it for me and looks like I lucked out, but I can tell you that the one I got was very firm and a light pale yellow color. It has somewhat of a sweet taste to me.
I just checked out DRNDR book and found this recipe for spaghetti squash on page 461:
Baked Spaghetti Squash with Garlic-Sage Cream
It's basically the ingredients I stated above, only he bakes the spaghetti squash and adds the ingredients in a cream base using heaving cream.
I'll try this version for tomorrow's lunch since I have all the ingredients. I've been trying to find a recipe to use my sage so I guess this is it. I'm sure it is very tasty too.

You're doing Atkins and not eating veggies? There are 59 veggie choices JUST for induction and both broccoli and spaghetti squash are on the list. Eat up your veggies, they are good for you and Atkins induction friendly.

Generally the only way to test a squash is to thump it. It should sound hollow. And check for soft spots. Those are bad.
It is possible to poke some generous holes in your squash and just microwave it whole until the skin is soft. Around 10 mins for me usually.
Alfredo Sauce:
1 part butter
2 parts cream
3 parts parmesan cheese
black pepper, garlic, nutmeg to taste.
Super, super easy, and absolutely fantastic on spagetti squash.
I wish I could still eat dairy. sigh.

I'm doing the '72 version....just protein and 2 small salads daily for 7 days, then add veggies, 5-8 carbs worth per day per week.

I love spaghetti squash tossed with sundried tomato salad dressing or roasted red peper salad dressing or greek feta salad dressing. Yum!

Ok, so made this again tonight, only this time I tried it with the garlic sage cream like in the Atkins recipe, only I nuked everything instead of baking it and I added some aspargus, pepper jack cheese, and crisp bacon on top. Totally Yummie! :yum:

That sounds totally delish. Well, I'm all out of spaghetti squash now, but I think I will try this one next time around:
