*Chicken Stir Fry*

Take a large green bell-pepper and slice in long strips.

Chop 1 bunch of green onions{stems and all} I chop slanted..

Take 2 big carrots and grate..{optional}

In a wok or large skillet:

Add 1 Tsp. butter{diet} and 1 Tbs. Ex-Virgin Olive Oil..

Turn on to Med. Hi Heat.. Add all veggies..

Sprinkle in a little salt/pepper/ and garlic powder..
Stir well..
Add 2 Tbs. Worcestershire sauce & 1 Tbs. Soy sauce..
Stir..
After about 5 minutes, place veggies/sauce in a dish and cover; set aside..

Chicken:

I use 2 bags of Tyson Fajita Frozen Chicken Strips..
{To feed 3 and have left overs for salad.}

In the same wok/skillet that veggies cooked in, add 1 Tsp. butter {diet}, 2 Tbs. Worces. Sauce, and 2 Tbs. Soy Sauce..

Add all of chicken and turn heat to hi..Add 1/3 C. hot water..Stir well and cover..

Once the chicken starts to thaw, turn heat to Med. Hi and sprinkle in salt/pepper/and garlic powder.

I usually add in a few more glugs of each sauce..

I start WG rice by directions and add fresh chopped parsley to the water..

Once everything is ready, I sprinkle the chicken with remaining fresh chopped parsley and stir in cooked veggies to re-heat....

I serve the chicken strips/veggies on a bed of wg rice..

This meal is so yummy and very easy!

I also omit rice and use fresh spinach leaves.

Add spinach at the very end and let it wilt just a little.

Yummy!

I'll be puttin' it down as well for my induction week.

No rice though, it'll have ta be spinach leaves.:)
