~Stacy's Southwest Chicken~
Soak chicken breasts for 2 hours in Teriyaki Sauce and "fresh" lime juice..{2 limes.}
Preheat Oven 400'
Line a cookie sheet/or baking dish with foil. Spray foil with cooking spray.
Add Chicken breasts. Baste the tops with sauce from soak.
{Then throw sauce away.}
Place chicken in the oven for 25-30 minutes.
While the chicken is baking, start your pico de gallo.
Pico: fresh diced tomatoes, diced yellow onions, & chopped cilantro. {Equal amounts of each.}
Lightly sprinkle with salt and squeeze a little bit of lime juice in. Stir well. Cover & chill in fridge.
When there is only 7 minutes left for chicken, fry up enough turkey bacon so each chicken breast has 1-2 slices. {optional}
Take chicken out of oven and switch oven to broil.
Place bacon{optional} on top of chicken and then place one slice of pepper jack cheese or swiss on top of bacon.
Place under broiler until cheese melts.
Serve pico de gallo on the side or on top of chicken.
This is great with a garden salad!
With this dish I always throw in some drained/rinsed beans to the salad.. {I use pinto or ranch style.}
