1 onion, sliced
1 green bell pepper sliced
1 yellow bell pepper sliced
2-3 pounds of pork sirloin (or any boneless pork chops)
8 oz chorizo
12 oz shredded cheddar (or co-jack, whatever)
garlic powder, salt & pepper to taste
lightly oiled frying pan
Sprinkle chops & veggies with garlic, salt & pepper, pan sear with chorizo, until pork is no longer pink. Put in a 9x13 inch pan and cover with cheese, bake until cheese is melted and juices run clear.
