- chicken pieces (legs,wings,breasts)
- 1/4 cup almond flour
- 1/3 cup parmesian cheese
- pinch red pepper

combine almond flour, cheese and pepper in bowl. toss chicken in bowl and shake it up, covering the chicken in the ingredients. deep fry chicken till done. internal temp. of 170F or higher.

Can't find almond flour on fit day but it has 6g. of carbs per 1/4 cup.

If a variation of this recipe has been posted before I apoligize... I was in the mood for some southern fried chicken tonight and was willing to look past the fatty oil to have some soul food. The only chicken reipes I saw all had pork rinds in them. I hate pork rinds with a passion.

This turned out even better than expected... My grandma (god rest her soul) who used to make the best fried chicken known to man would approve this recipe!

Hi - thanks for posting. I'm not fond of pork rinds myself - I've used them as fillers in meatballs and they make me feel a little sick. This recipe sounds good but I'm still on induction, so will wait awhile to try it - don't think almond flour would be legal.
