This is something I could eat every day for a week and not tire of it.
Take a round steak and cut it into stew beef sized chunks. Place it in the crock pot with a container of chicken broth and slow cook all day. Add spices such as garlic, pepper, etc. I usually use garlic, onions and hot pepper flakes.
Make recipe for mock mashed potatoes (either use your own or here's my version):
1 head fresh cauliflower
1 block of pepper jack cheese, grated
1 tbsp butter
1/2 cup sour cream
salt
pepper
Cook cauliflower till tender, mash and add in each ingredient in the order listed.
Serve in bowls with mashed cauliflower on the bottom, with the stew beef and broth ladled over top. Delicious!

how big is a block of pepper jack cheese? In inches would be nice or grams. I can't decide which I like better the metric system or the empiracle (sp?) but I can do both. I guess I can bi-measure. LOL

I don't know how big a block are you using. I buy my cheese in big blocks that are ~ 20X4X1 Big Bricks, yes I love cheese.

I am not positive but I think a block of cheese usually is about 8 ounces. Usually the stores have different size blocks but I think about 8 ounces would be very close.

Thanks. I buy a lot of things in bulk, and have gotten pretty good at judging what 8 oz of cheese looks like.

Oh yes I"m sure that would be awesome too. I never use beef, only have chicken broth in the house, and I think that's what made me use it in the first place. Let me know how this turns out!

PS--I sometimes have beef stock, but it doesn't matter once you cook the meat it will become beef flavor anyway. I do however, always have chicken stock, so I will use that as well.

OK so I made the beef stew and when I got home I added some broccoli and let it steam in the crock pot with beef a while and added curry seasoning and it was quite good.. Thanks for the recipe
