I eat salmon because it is one of the best foods you can eat. Don't care for it much...until now. This is so delicious without that "salmony" taste.

You will broil, or grill the, filets. . .

make a Marinade:
1/4 Cup Vegetable Oil
1/2 Cup Orange Juice
3 Tbsps. Lime Juice
1 Tbsp. Tequila
1 Tbsp. Lime zest
2 Tbsp's. Jalapeno Chili, seeded, minced
2 Cloves Garlic, minced

Add 2 6-ounce Salmon filets, skin and bones removed.
Cover and marinate for 4 hours, really, 4 hours. . .turning the filets over once or twice during the mainade time.

Make butter patties:
In a small dish, add
1 Tbsp. Lime juice
2 Tsp's. Jalapeno chili zest (just the skin of the chili)
2 Tsp's. Lime zest
2 Patties of butter, tossed to coat

Cook the filets until they are flaky, about 6 minutes per side. Plate them, then top them with the butter patties.

This dish is sooooo satifying and a huge flavor burst! Add more jalapeno and garlic depending on your taste buds.
