i am in dire need of some advice! i am a veggie and have been for some time now, flirting with becoming vegan...point, i need to lose, or WANT to lose 20 more pounds and i know the only thing that works for my body is low carb.
but what to do besides eggs, mayo and cheese?
what do you other veggies do to pull you through?
especially induction.
im doing low carb-high fiber meat free product, but i swear its not coming off like it should if i wasnt eating them. but i have to have something more...
any advice would be appreciated!
and im not a cook!!! lolololol

I, too am veg, was vegan for a while, and hopefully will morph into vegan again eventually....Anyway, yes, food diversity is hard sometimes. Although, I do make some exceptions as to the allowed foods. I know I'm just have to deal with the fact that it will take me longer to overcome the carb cravings, but hey, it's better than giving up altogether because it's too restrictive! Here are some foods I've picked up recently:

Wasa crackers - eat with peanut butter or cheese
Peanut Butter
Nuts, especially peanuts and almonds
LC tortillas - quesadillas, wraps, or some say you can bake and make chips
Lindt 85% chocolate - as a treat infrequently
LC yogurt
(of course eggs, a variety of cheeses, cream, mushrooms, cucumbers, avacadoes, salad greens)

My favorite breakfasts are omelettes with mushrooms and feta cheese, LC yogurt,

Some good snacks are celery dipped in cream cheese or ranch or peanut butter, string cheese, steamed brocolli with melted cheese, the onion/garlic flavored roasted almonds, mixed nuts, wasa crackers and cheese

Lunch/Dinner for me are unexciting, and mainly larger portions of snacks or I'll have a quesadilla, stir fry, a big salad with cheese and hard-boiled eggs,

As I am writing this I know I eat much more than this, but must be blaking for the moment being. I will try to think of more. Let me know if you want more detail about anything, everything I make is very easy (I'm not much of a cook, either) so I hope you wouldn't have a problem with it.

Seitan is usually commercially available in marinated chunks or slices that require very little prep--White Wave is one brand. You can grind it up, get it like filets or chunks, or shred it, grill it, cook it in broth, fry it, microwave it, use it to add protein to a salad or soup. Each serving is around 30g protein, 2-3g carbs and the fat grams depend on what you add to it.

Tempeh requires more preparation skills, but one of the easiest ways to prep it is to cut into 1" cubes and brown it on all sides in a skillet. Then you can use these 'croutons' on soups and salads, in wraps and quesadillas, etc.

I can thin of quite alot of protein foods. Peanut Butter, Tofu, Quorn, Seitan, Eggs,Cheese, Kefir, Plain Yogurt, Soy Products, Some Veggie Meat alternatives, Small Red Beans, Black Soy Beans, Chorella which is a sea vegetable. Green Drinks, Wheatgrass Juice, Barley Grass Juice to name a few. Just make sure you eat adquate fat. Judy
