Can someone post what they are having this weekend...I'm scared for Saturday and Sunday (days I usually binge eat)

my typical weekend looks like this...
breakfast: coffee, coffee, and more coffee... usually with some half & half if we have it, otherwise with a little bit of heavy cream
lunch: most likely an omelette with cheese, or maybe some devilled eggs. it's rare that i go out of my way to make anything complicated for lunch on a weekend... i'm too busy with crafting stuff :). lunch may also just be me snacking on leftovers, depending on how hungry my fiance is.
dinner: same things i'd make during the week... it could be pork chops, steak, roasted chicken, burgers, whatever.

I have trouble remember to eat on the weekends, I usually only have dinner. If I do remember to eat I'll probably have:
BF: scrambled eggs, bacon or sausage
Lunch: burgers, tuna salad on lettuce, or egg salad on lettuce
Dinner: steak or pork chops with zucchini puffs or mashed cauliflower.
I just got my very first box of carbquik so I might try my hand at sausage gravy and biscuits, yum!

This weekend looks like most others:
Sat: Breakfast eggs scrambled with chopped veggies and turkey sausage
Lunch: leftover smoked turkey leg (B-I-L smoked it himself adn its 'da bomb) and salad or leftover cajun turkey stew (from the freezer made a couple weeks ago)
Dinner: Leftover lamb roast and cheezy cauliflower or hotwings and celery while we watch football. I may have a lc mikes hard lemonade or a diet tonic and gin.
Sunday: Brunch...depends but whatever the DF wants maybe fried eggs on top of leftover meat and a smoothie for me. I also have some knackwurst to use up which is great fried up with eggs.
Dinner: roast turkey thighs with a cooked veggie (green beans? broccoli? not sure yet). DF will bake a potato.
We often eat out on the weekends for one meal, but we have been out a lot with my mom here and need to eat up the leftovers in the fridge/freezer.

I've seen this recipe, not really a recipe even, and it's quite simple - it's also induction legal:
Cut a zucchini into rounds; mix together mayo, parmesan cheese, and chopped fresh basil, and spoon some onto each round. Place in broiler about 5 inches from the heat and watch carefully - about a minute should do it!
Sounds yummy to me but I haven't tried it - every time I try to broil a cheesy thing (specially parm!) DH threatens to have me charged with attempted homicide! (He HATES ALL cheeses with a passion!) :lol: :lol:

The weekend is a great time to roast a couple of chickens. That way you have leftovers to munch on whenever you get the urge. And people are so impressed when you set a whole roast chicken on the table. It's like they think there is something hard about it or something. It makes a great Sunday dinner with some greenbeans almondine, some roasted summer squash and some marinated mushrooms.

Hi, this is my first post here. But I thought I'd join in. Here's my weekend menu:
Saturday
Breakfast: Omelet w/2 eggs, sausage, cheese, sour cream, green tea
Lunch: Egg drop soup, water
Dinner: Beef Stroganoff, water
Sunday
Breakfast: 2 fried eggs, 2 sausage patties, green tea
Lunch: Fajita chicken breast, pepper jack cheese, green tea
Dinner: Shrimp Scampi, Caesar salad, water

On the weekend, I like to do things I don't make during the week, so it "feels" like an indulgence..for example breakfasts - super cheesy loaded omelets, and for suppers - deep fried hotwings and ceaser salad - or a shirataki noodle stirfry, stuff I can' t eat "everyday".

Weekends I tend to eat out or make fresh dishes (weekdays tend to be quick meals or leftovers, or Tyson hot wings from Costco, love them wings, :yum: ). Breakfast is still coffee wtih sf syrup, coconut oil or heavy cream, scrambled eggs or fake french toasts. Lunch and dinner will be either eating out or baking some chicken thighs or steaks. Sometimes I'll bake a quiche or some quiche cups (leftover for the days to follow). I'll bake some cheesecake (in small ramekin cups for later in the week also).

I am new here but will tell you what I am making. I saw this recipe somewhere and I'm sure this is not exactly what it's supposed to be, but have adapted it throughout the last 4-5 yrs to the way I like it...boneless, skinless chx breast filets in crock pot, pour can of lowest carb enchilada sauce you can find and a can of diced green chilis over and cook on low 8-10 hours, then add a brick of cream cheese and a couple of cups of cheese (I use cheddar), and some chopped green pepper and put on high and let crock for another maybe hour, stir, and serve. It is creamy, cheesy, and with a little bit of spice. Wonderful. I make enough to eat on for several meals. I love teh crock pot.
