Let me start off by saying this....I really don't like sauerkraut, but my husband (the non-low carber does). I had two, very nice, 1" pork chops and a jar of kraut that has been in the refrigerater for about a year. Unfortunately, the stuff never goes bad, but then, how could you tell.
Anyway, this is what I came up with for dinner tonight:
I floured the pork chops with seasoned Carbquik (salt, pepper & garlic powder) and browned them in some bacon grease. I removed them to a plate & added one medium onion, sliced & cooked them until they were nearly carmelized. Then I added one peeled & sliced apple & cooked them over med. heat for about another five minutes. Then, I added the sauerkraut, crushed garlic & brown Sugar Twin. I put this mixture in a bowl, put the chops back in the pan with water & spooned the sauerkraut mixture back on top of the chops, covered the pan & cooked on low for 2 1/2 hours. You could do this last part in a crockpot without adding water.
They were so good that even I loved them & my husband said I should write it up for our upcoming Elks cookbook. I thought I'd do it here first while I could still remember how I did it.
I know I'm doing this bassackwards, but these are the approximate measurements:
2 1" pork chops
1/4 C seasoned Carbquik (or another LC bake mix)
1 med. onion, sliced
1 tart apple of your choice
1 1/2 C sauerkraut
1 tsp crushed garlic
1 tbs brown Sugar Twin
Here's the carb count, as close as I can figure:
Carbquik 10
Onion 15
Apple 20
Garlic 1
Sauerkraut 6
So, the count per serving is 26. It was so much that it's all we had room for.
