1 lb Italian Sausage links, sliced
1 lb boneless skinless chicken breasts, cubed
3 tbsp oil
1 med sweet red pepper, chopped
1 med onion, chopped
3 celery ribs, chopped
1 tsp dried marjoram
1 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp cayenne pepper
3 cans (14 1/2 oz each) chicken broth
1 can (14 1/2 oz) diced tomatoes, undrained
1 lb uncooked medium shrimp, peeled and deveined
2 cups frozen sliced okra

In Dutch oven, brown sausage and chicken in oil. Remove with a slotted spoon and keep warm. In the drippings, saute red pepper, onion and celery until tender. Stir in the seasonings, broth and sausage mixture; cover and simmer for 20 mins. Stir in tomatoes, shrimp and okra; cook for 10 mins or until shrimp turn pink, stirring occasionally.

Yield: 14 servings.

Nutritional Analysis: One serving (1 cup) equals 240 calories, 15 g fat, 93 mg cholesterol, 802 mg sodium, 5g carbohydrate, 2g fiber, 20 g protein.

Can I leave the okra out?

nole184- Yes, you can leave the okra out. I like it myself, but as much as my father is 100% Cajun, he doesn't care for okra in his gumbo. hee hee

YUM...I haven't had good gumbo in years. Thanks for the recipe. And for the record, when I used to make gumbo, if you cooked it well, couldn't even taste the darn okra. :lol:
