I adapted this from a vegetarian recipe I saw on TV. I first made it for the two of us, but it was very rich and a bit too filling, so now I make it in two smaller containers, and freeze half. Goes well with a side salad.

400g/14oz can tuna
400g/14oz can tomatoes
1 onion, chopped (could be substituted with green onions for fewer carbs)
Chillies as desired - I use 2 or 3 large red ones.

250g/8 oz cream cheese, softened
1 egg

Vegies of your choice - today I used chopped mushrooms, zucchini and capsicum

Grated cheese

Preheat oven to 180ºC/350ºF. Grease casserole dish.

To prepare the tuna layer: Sauté onion in olive oil, add chillies and when softened add canned tomatoes. Simmer until as much moisture as possible has been cooked out, then add tuna.

Cream cheese layer: Mix the softened cream cheese with the egg.

Vegie layer: Sauté all vegies in olive oil.

To put it all together: Place about ½ tuna mix in the bottom of the casserole. Cover with ½ the cream cheese mix, then ½ the vegies. Repeat, being sure to bring the cream cheese mix to the edges.
Cover and place into the oven for about 30 minutes. Remove cover, add grated cheese and return to a hotter oven until cheese is melted and browned. Enjoy!
