Ok, I came up with an idea to get some ideas about vegetables. I'll list ONE VEGETABLE... and the next poster list everyway possible they can think of to fix that vegetable (south beach friendly of course), and then THEY list a NEW vegetable... to which the next poster will list all the ways to fix THAT vegetable (again sb friendly).... and so on. We should a.) get a HUGE list of lots of veggies and ideas, and b.) have some fun!!!! Hope this is an okay post to have here!!!! :)

this one I'm not going to be very good at.... mostly because I am a very "new" mushroom eater....
So..mostly just chopped up on a salad
in scrambled eggs
or a portabello on the grill
or stuffed with broccoli, cheese and somechicken broth
any other ideas???

I adore mushrooms and put them in everything!! :lol: I even put 1 lb of sliced mushrooms in my chili with cut up zucchini.
I also will sautee mushrooms and onions in garlic and evoo( rachel ray rings in my ears :lol: )to have with a steak and mashed cauliflower...hmmmmm!!! :yum:

What a great post - thanks for the idea!! More veggie variety will help keep me motivated.
So.......are we still on mushroom? I'll try to continue it but you've covered a lot.
- portabello mushroom as basis for mini pizzas (got it from Low carb Living magazine, yummy even if got a little watery from pizza sauce- grilled with other veg, pepproni and cheese)
- especially tasty when the most fresh and very white, with hummus or plain
- haven't tried it yet, but what about shirataki mushrooms; supposed to be kinda pasta-like?
- to reiterate Judy, mushroon fried with onions on anything or as a side-dish is yummy - thanks for the reminder!
- i remember reading in the one copy I've ever seen of Low Carb Living (borrowed and have been searching since in vain :( - can't find it in Canada yet, I may suscribe), of 'breading' chicken with some mixture of egg and parmasean cheese (will have to borrow back magazine for details). Maybe we could make breaded mushrooms this way!

red peppers (just love'em)
To next person, feel free to add any more mushroom ideas that weren't said before you do peppers!!! I want it all eh?

Lattelover I love you! Fried mushrooms made with egg and parm. If I just do them in a little oil maybe I can have some, oh....I hope it works. I really love deep fried mushrooms but this might be a great sub!

ok for the green Bean Cheeseburger Casserole:
I brown 1 package of Lean Ground Beef in the pan, discard all but 1 Tbsp of Fat drippings, finley dice onion, add to drippings and brown, add the onion to the beef in a 8x8cake or cobbler pan, top with 1 can drained cut green beans (or cook fresh green beans until soft). Then I top with a mixture of Mayonaise and heavy cream and 1 beaten egg (mix in a seperate bowl before topping the casserole you want the copnsitency of gravy) sprinkle with Shredded cheese and some Bacon bits and bake in oven at 350 Fahrenheit for about 30-40 minutes or until everything is heated and the cheese is melted.

That does sound really great Susan. :yum:
I'm just wondering if it could be made a bit more SBD friendly with ground turkey instead of beef and using half and half instead of heavy cream, reduced fat cheese?....and turkey bacon instead of the real bacon?
What do you think Susan?

Thanks so much, Miezimau, for giving me the cheeseburger details - sounds delicious. I have the pizza quiche by Donald a few years ago in the oven for it's last few minutes and looks amazing if any of you are interested (in recipes - main dishes). On the red pepper theme, I used them on the pizza instead of green.

I love red peppers and they are a staple of my diet, I eat them ever single week!

Judy, I always use reduced fat cheese, sorry I haven't written it here and yes you could certainly use Turkey instead of beef. Thanks for the suggestion of ff 1/2+1/2 instead of the heavy cream. I never even thought about that. Also for the Bacon, of course I use Turkey bacon.

Next veggie....cabbage!
I often just boil cabbage, but there are other things you can do with it! :)
Stir fry it
Sautee it
Put it in soups
Make wraps with it (using it as the wrap after cooking and cooling)
Line muffin tins with it, fill with quiche filling and bake in the oven

I am getting SO MANY Great ideas!!! (who's idea was this post anyway???? LOL) I just have NO CLUE on pumpkin though... other than a sf pumpkin cheesecake.... and I know I've SEEN a pumpkin soup recipe, but never have had the guts to try it!!! OH, and perhaps after CARVING a pumpkin for a jack-o-lantern if you ahve the patience to pick the seeds out, they can be toasted and salted and eaten.
Other than that... hmmm... need some more ideas.

HATE??? Sprouts???!!! No way!! They are super de duper yummy scrumdumptious!
Here's my all time favorite to do with sprouts....
Roughly chop the sprouts and sautee them off in olive oil and some chopped turkey bacon....they are super scrummy then!
Sprouts are only horrid because people over cook them! They get smelly and slimey if you cook them too long!

I used to never eat brussel sprouts!! Blech!! :lol: But that was before I changed my attitude and decided to try to learn to cook them so that I'd like them.
I suatee them in olive oil, fresh garlic and crushed red pepper. I love them this way!! :yum:

You're all so great with these creative ideas; it'll keep me motivated and mever get bored of veggies - thanks!! I love the cabbage ideas: in quiche and as a wrap (I buy these big crunchy curved lettuce leaves to use them as wrap). I also would appreciate eggplant tips bc the couple of times I've done them (fired in pan with olive oil). they get so mushy.

Honestly I have never been able to fix them in a way that made them appealing. Maybe someone can teach me how to cook them.
Ok, first thing you need to do with eggplant is to get the sourness out of them, you need to do that by either cutting them in half or slicing them, and then sprinkling with salt on both sides and putting something heavy on top of them (I ususally put a heavy skillet on top) then you leave them to drain for at least 4 hours. It's amazing just what moisture comes out of them! And after this process they are not at least bit bitter. You have to wash them thoroughly to remove the salt before cooking!
Then you can use them as a kind of lasagna noodle....or you can stuff them - if you stuff them, make sure you boil them first in a pan for at least 10 minutes. Then you have to put whatever filling you want and then cook in the oven on a medium/high heat (covering with foil) for at least an hour....but they can take longer.
It's sooooo worth it because they are GREAT stuffed!
Also, if you have done the salt thing on them they can go into stews...they make a sauce for a stew or ratatoille thicker when they cook down.
They are very versatile and they are actually very nice if you prepare them properly.

Foxy, thanks for the advise. I have salted them and allowed them to drain but have never weighd them down. Maybe that will make the difference.

Yeah, you have to kind of press the moisture out of them, that way they lose all that bitterness :)

Thanks, Foxgluvs! I did not know that eggplant needed to be drained/pressed. And, I don't remember my Mother doing that either, but then I was never really interested in cooking.
