These are easy and delicious hors d'oeuvres that are just perfect for
the meat and egg plan.


MEAT and EGG Lovers: Shrimped-stuffed Eggs

1 dozen of eggs
1 lb medium shrimp
1 TBSP Full fat mayonnaise (select brand with lowest number of carbs)
1/2 TBSP Dried chives
Salt-n-pepper to taste
Shrimp Boil (watch carbs)
Smoked Paprika to taste--- optional

Boil shrimp in Shrimp boil until done. Boil eggs until done.
Remove cooked shrimp from pot, peel and clean as is necessary. Place in
bowl and add other ingredients. Mash together until well mixed. When eggs
are ready, peel, slice in half and place on platter or plate . Remove yolks and
save for other recipes. Scoop shrimp mixture into egg-white halves. Wrap
platter and refrigerate for 1 hour. Enjoy!

***Variation: You may also use canned shrimp. Just make sure to rinse
well and clean.****

Is it a broth? Can I make it without the shrimp boil?

I need a couple ideas for when my domineering parents come over on the 23rd. (UGH!)

I was thinking your recipe and then maybe the bacon olives one I saw on here and possibly using the egg yolks and finding mini sausage patties at the store to replicate egg McMuffins (some without the muffins).

What do you think?

Shrimp boil is a seasoning to spice up shellfish such as shrimp, crab, crawfish. It comes in a spice bag with peppercorns and other tasty things. It also comes in a pungent liquid, which I think this recipe uses. I like the liquid! Should find one or the other in the spice aisle of the grocers.

Athena, I also add a little olive oil to the boil. It seems to enhance the
flavor.
