Every once in a while my family and I like to have breakfast for dinner. Today since my family was having mac and cheese i decided just to make myself some breakfast. So I made a couple of eggs and some turkey sausage and a big pile of green beans. The an inspiration hit me and I put a little diabetic maple syrup on my eggs. I ahve to say, it tasted jsut like I was eating pancakes and eggs. I think it is the yoke syrup combination that did it for me. I really enjoyed it. I hope this inspires some of you to try it. Anytime I can stay lc and still have the flavors I love, "It's a good thing."

I do that quite often too joesfolks. Whenever my family wants something like pizza or lasagna or something like that...I just make myself breakfast. Sometimes we even do it as a family because it seems that the only day I usually get to have the "big" breakfast is on Sunday! I agree that eating something we love and that tastes good is always a plus. I've never thought of syrup on eggs though!
