Are pumpkin seeds low carb? I was thinking of taking the seeds out after my son carves his pumpkin and roasting them with some salt. I didn't know if this was ok. I know some nuts and seeds are but not sure about this one. Thanks for your help in advance.

According to www.fitday.com, one cup of 'Pumpkin and/or squash seeds, hulled, roasted ' are 30.49g carbs less 8.8g fibre.
So one flat tablespoonsworth would amount to about 1.35 net carbs.

and even less carbs if you eat them with the hulls Like I do when I carve a pumpkin. Soak them is salt water before roasting if you want that salt flavor to permeate a bit into the shell.

I did it once years ago. The hulls are (if I remember right) quite edible once they've been roasted.
