Hey everyone,I been eating nothing by chicken lately (of course) but im about SICK AND TIRED of broiling it,or cubing it to put into salads!! I dunno WHAT ELSE TO DO WITH IT or OTHER WAYS TO PREPARE IT. :help: So do any of you have some IDEAS?! Any tips to share? I would appreciate them!! Thanx :wave: :agree:

I'm not sure how you usually buy your chicken, or what parts. If you're talking about uncooked chicken, I don't really like messing around with complicated recipes, so my favorite things to do with chicken are pretty simple. It usually involves dumping it in the crockpot.
- Season it with cajun spice.
- Season it with this sticky chicken (http://forum.lowcarber.org/showthread.php?t=75914) spice mixture.
- Season it with some cumin and/or taco seasoning, serve it Tex-Mex style with cheese, salsa and sour cream.
- Dump in some Atkins teriyaki sauce.
- Make chicken cacciatore with a can of tomatoes, italian spices, dry wine, and veggies.
If you buy boneless chicken and cook it all up ahead of time... heck, the possibilities are endless! Soooooo many things you can do with cooked chicken, vegetables, cheese, bacon, and dressings.

I like to take the chicken and make chicken salad.
I put the chicken,mayo,onion,salt and pepper in a food processor or blender and mix it all up.
You can use celery or herbs too if you wish. Or even hardboiled eggs to it.

Ooh nice!...I love those recipes!! They sound so yummy!! :thup: Especially the TEX-MEX one. Yum! :yum: lol THANX..but im talking about chicken breasts.I usually buy them because it's so much easier to work with.Plus it don't have all that skin (which I love when fried) hahaha But I guess my mind hasn't been in "creative mode* lately!! lol

I love making chicken scampi with cubed chicken breast. Cube raw chicken and saute in olive oil & butter. Add minced garlic when chix is cooked 1/2 way. When the chicken is fully cooked add a splash of white cooking wine & juice of 1/2 a small lime. I add diced tomatoes and cook for just a couple of minutes longer. It's one of my favorite meals. Be careful not to over cook, if it's cooked just until done it's very tender & super moist.

That's still pretty easy. I'd buy more chicken breasts if it was cheaper here. Every few months, they go on sale for 1.99/lb in big bags, then I do my crock pot thing. :) I package it in Gladware containers and chuck it in the freezer.
I like to take the chicken and make chicken salad.
I happen to hate mayo, but I love making chicken salad out of just about any other salad dressing! My favorite is three-cheese ranch. I also like feta greek, bacon ranch, roasted red pepper with parmesan, caesar... eat it with foods that match (like tomatoes/olives/feta cheese for the greek, zucchini for the roasted red pepper) and you've got lots of different tastes to choose from.

Recent, and simple chicken dish I made:
Whole roasting chicken (about 5-6 pounds)
2 whole bulbs of fresh garlic
some olive oil
salt and pepper. (I sometimes use a wee bit of Montreal Chicken seasoning, or some other seasonings, just use what you like, salt & pepper is just fine too though, as it's the garlic that really brings out the flavour of the chicken).
That's it!
Clean the chicken and pat dry. Peel off the outermost layers of papery 'skin' on the two bulbs of garlic. Place both whole bulbs of garlic inside the chicken cavity. Rub the outside of the chicken with a bit of olive oil (I use an olive oil mister thing that makes this step a little easier, less messy), sprinkle salt and pepper. Bake at 350F for about 2.5 hours. I put mine on a rack placed on a 9x13 rectangular baking pan.
Don't let the amount of garlic scare you - it roasts inside the chicken, and the flavour is fantastic. You get very moist roasted chicken with a nice crispy skin.
Add salad or some steamed asparagus - and voila - a wonderful meal.

Tonight I am using chicken for the Ruben Chicken Casserole recipe you can find on here.
There is also the broccoli cheese bake that uses chicken, and numerous others if you do a search in the main dishes forum.

As mentioned above there are lots of great recipes in the main dishes of this forum. Plus alot of recipes that normally use pork or beef are also great with chicken.
Here's lots more of them and I've never tried one of Linda's recipes that wasn't good. The Green Chicken Enchilada casserole is one of my favorites.
