Even before starting adkins, I frequently went to SOAR for recipes. It is filled with many recipes from all over the world.

This one is great and can be brought for lunch.

Pork Salad:

1 LB. extra lean ground pork (from meat counter)
1/2 C. red onion, diced fine
3 green onions, sliced
1-2 red serrano peppers, minced
3/4 Tbs. fresh grated ginger, minced
10 stalks cilantro, minced
3/4 C. roasted peanuts, chopped
3 Tbs. fresh lime juice
2 tsp. fish sauce, can be found in oriental section of grocery store
1 tsp. salt
1 head of butter lettuce

In wok, cook pork and stir so it looks the size of rice when done cooking. Add peanuts, cook til done. Drain and discard liquid. In glass bowl combine all other ingredients, add pork mix. Place lettuce leaves (whole), on serving plate, and put warm pork salad in center. To eat, just scoop onto lettuce leaves and enjoy.
