Horray! I had one that came out great today.

Here's the recipe I used:

Crack 2 eggs into a bowl
Put in 1/2 tsp of baking powder
Beat with a fork
Add in 2 T. of coconut flour (almond meal would work but you might need more, coconut flour is thirsty stuff)
A squeeze of lemon juice (optional)
A few drops of splenda (about a T. worth of sweetening)
1 T. of flax
1-2 t. of butter (I use ghee)

Mix well and microwave for 2 minutes.

Then I put a generous serving of mixed frozen berries in another bowl and microwaved them and poured them on top of the cooked bowl muffin. The Buffin happily soaked up the berry juices and it was delicious!

I have a better version now.

1 heaping Tbl of rice bran
1 heaping Tbl of coconut flour
1 egg
The equiv. of 2 Tbl of sweetener
Some sort of extract (I like banana or lemon best)
Frozen or fresh berries
Chopped nuts (optional)
1/2 tsp Baking Powder
Water

Mix baking powder, rice bran and coconut flour with a whisk or fork until well mixed (and sweetener if it is the dry sort).

Crack the egg into the bowl and add extract (about 1/2-1 tsp) if you have a liquid sweetener add it. Beat the egg with a fork incorporating the dry ingredients. Add water (or more liquids of whatever sort) until the consistency is nearly pourable, about like thick pancake batter.

Drop in your frozen berries and stir in the nuts.

Microwave for 1-1.5 minutes (or more) until it starts looking completely cooked on top. But don't overcook or it'll be too dry.
