Strawberry Cobbler

Serves: 6

This was adapted from the Zucchini recipe from Tripletmom and came out AMAZING! My "non-low-carb" friends said that it was delicious!!!

INGREDIENTS:

1-2/3 cups strawberries - sliced
1/3 cup Splenda and 1/3 cup Poly D+ mixed together
1-2/3 cups carbquik
1/2 cup butter, chilled
3 tbsp butter for topping

DIRECTIONS:

1. Preheat oven to 375°F. Coat a 9x13 inch baking dish with cooking spray.
2. Mix sliced strawberries and 2 tbsp of the Splenda/PolyD+ mixture. (or equiv sweetzfree drops)
3. In a large mixing bowl, combine carbquik and half of the Splenda/Poly D+ mixture.
4. Cut in butter until the mixture resembles coarse crumbs. Stir 1/2 cup crumb mixture into strawberry mixture.
5. Press half the remaining crumb mixture into the prepared pan. Spread strawberries evenly over crust.
6. Crumble remaining crumb mixture over strawberries and sprinkle with remaining Splenda/PolyD+ mixture and dice up three tbsp of butter over the top.
7. Bake in the preheated oven for 35 to 40 minutes, or until golden and bubbly.
It comes out flaky and crusty and just great...

I did this, but using frozen mixed berries. Was very good, but probably carby. Who cares for the occasional treat though :)

Trying this again. This time I am using tart cherries I had frozen from last years farmer's market, and fresh rhubarb.

I ended up with about 3 cups of fruit total, so I doubled all the other ingredients.

Also got distracted by the nap time arguement with small children and did the additional polyD mix under the crumble crust, not on top. Darn it. I wanted some of the crisp still, so I sprinkled alittle extra splenda on top, and some cinnimon, then added the pats of butter.

Edit: ok eating it now. Fairly good, but I shouldn't of doubled the other ingredients. The crumble came out great, but really overpowers the taste of the fruit
