I love making this! My measurements arent exact since I tend to eyeball things so feel free to adjust to taste.
Ingredients
1-2c fresh or frozen strawberries (raspberries work great too!)
1 (8oz) pack of cream cheese
vanilla extract
About 1C Heavy Cream
Sweetener of choice (I use shugr when I can)
1 low carb pie crust if you want
Microwave frozen berries with 1/4c sweetener (or equiv) until soft and gooey. If using fresh fruit just smash the fruit (lumps are good so do not puree)
In the mixer whip the cream cheese and vanilla extract until light and fluffy. Stir the smashed berry mixture into the cream cheese and mix well. In another bowl whip about a cup of cream (fluid) until fairly stiff with about 1/3 c sweetener. Gently fold the whipped cream into the strawberry cream cheese mixture. Make sure its folded well but try not to deflate too much. Pour into pie crust or individual serving cups or a big bowl or whatever you want and stick in the fridge for a few hours or overnight.
