I just came up with a yummy easy sub for pumpkin pie.

3/4 c. canned pumpkin
3 oz. cream cheese
1 1/2 tsp vanilla
2 eggs
1/4 c. splenda brown sugar

Cream cheese, eggs, brown sugar , and vanilla. fold in pumpkin and spice. microwave for four minutes.

I look for cheap and easy...This falls into both categories. :agree: :)

If you are using Splenda Brown sugar, that could be why it's difficult to stay on Atkins. The splenda brown sugar is a blend of 50% real sugar and 50% splenda. You are basically still adding sugar to the recipe.

For a brown sugar sub that is lower in sugar there is Brown sugar twin which uses saccrine in the US and a better sweetner in Canada. Another possibility is using regular splenda and adding a touch of black strap molassas.

That's the first time I used Splenda brown sugar. Thank you soooo much for the info. I wish I had known that though, I definitely would have done it differently. Thanks again. I don't want any sugar in my trial recipes. I'll try again with the sugar twin.

I just made this and only used a dash of vanilla and in place of the brown sugar twin I used 1 Tablespoon of Carmel SF syrup and 5 drops of Sweetzfree. I added cinammon, ginger and clove too. :yum:

I tripled this recipe yesterday and of course there is none left/LOL thanks to the lady that submitted this it is wonderul.
I wasn't the only one eating. My husband took some to work; he is loving all the recipes also
