Southwestern Beef and Eggs ~ 4 servings

2 tablespoons oil (olive, canola, etc.)
1/2 cup onion - chopped
1 clove garlic - minced
2 cups leftover roast beef - shredded
1 4 oz can chopped green chiles
Salt and pepper to taste
eggs
shredded jack or cheddar cheese
LC tortillas - optional
salsa verde, avocado and sour cream - optional

If you are using tortillas, cut them into strips and saute them in some hot oil to crisp them up a bit. Set aside on paper towels to drain.
Saute onion and garlic in oil until softened. Add shredded beef and brown a bit, approx 5 mins. Add green chiles and heat through. Check for salt and pepper. Set aside.
Cook your eggs however you like them - I like over easy so the yolk runs into the beef. Scrambled is good to.
Place tortilla strips on serving plate. Top with beef mixture, shredded cheese, eggs (I put the cheese in between the meat and eggs so it gets all melty :yum: ) and any other stuff you want (you can also skip crisping the LC tortillas and wrap everything up in one and have a breakfast burrito). Enjoy!
