Ardentluma - One thing I do for a very quick dinner is have Boca Burgers in the freezer. I pop one in the microwave and melt a slice of low fat cheese on top. Then I eat what ever veggie I have handy, celery, salad, what ever is easy and on hand.
That is my quick no hassle dinner.

LOL I forgot I had Boca burgers in my freezer too. My husband doesn't like them, but he does like the soy beef crumbles on his tacos--go figure!

A zucchini casserole that I found some where in the recipe section. I'll edit my post and go find the link. It's delicious, with the texture of a quiche. It's more of an atkins or low carb, but it is easy to modify for South Beach's standards of low saturated fat.

One thing that I started to do and still do is each week cook up 2 lbs of chicken or turkey breast cutlets in my own yummy marinades with lots of garlic!! :yum: I keep them already cut up into 1 oz piecs in a tupperware in the fridge.....this means that I can always throw together a quick and easy salad and have a good lean protein to put into it.
What this also means is that I have to keep my fridge stocked with fresh veggies at all times. A bit of a challenge at first but now its become a habit.
I also keep boxes of frozen veggies on hand ie: brussel sprouts, chopped broccoli, spinach, etc.
Being prepared is a good way to have success!! :D
