Breakfast:
1 hard boiled egg
(I know that's not enough, but I had a stomach ache.)
1 cup of coffee with cream and splenda
Snack:
None
Lunch:
Left over yummy eggplant casserole
(Eggplant browned with parm cheese in canola oil. Ground turkey and zuchinni browned. Skim ricotta. No sugar tomatoe sauce and low fat mozzerella cheese on top!)
1 orange sugar free jello
Snack:
FF plain yogurt with splenda and vanilla extract 1/2 cup
Some left over eggplant just sauteed in canola oil, garlic, and basil
Snack:
2 slices of ham and 2 small chunks of salsa jack cheese.
Dinner:
Stir fry of veggies and steak strips
LC soy sauce to dress.
I'm making rice for the man, but not for me.
Dessert:
I tell myself none, but I'll probably have some ricotta creme or SF jello.
On this note, the TOM is now over. I am going to revert back to a lower fat intake and see if that empty/achy nasty feeling comes back or not. I have tossed the natural peanut butter because it is way too tempting to eat the whole jar. I am going to try experimenting with skim ricotta cheese and some various spices as a dip as I do not really care for hummus. I have been fortunate to find some variety of snack slices of low fat cheese in a different grocery store other than Wal-Mart. Hopefully, I will not be dissappointed. I love cheese, but "regular" cheese is a known staller on any low carb regime. Time will only tell. I'm in this for a lifestyle change, not for a quick solution to my obesity.
***Edit. I have had plenty of water today and I am not working out today. I normally do not on Mondays.

Hi, I'm back from a 2 1/2 week vacation with my family. 2 1/2 weeks of my mom's delicious home baked meals - oh no, I tried to be good - really!!.
Phase 2-3:
B: ww english muffin with 2 fried eggs and 2 slices of ff moz cheese, 7 cherries, 3 coffee, small glass of v8 juice, vitamins, water.
L: 1% cottage cheese with rye bread, water.
s: sf fudge bar.
D: Roast beef, tiny piece of roasted potatoe, ceasar salad.
s: Glass of red wine? popcorn?
I'll eat better tomorrow - more veggies, and I can't exercise for a while because I strained/pulled my neck muscles while I was away.
