I read a recipe the other day that called for a thickening agent to use rather then flour. I can't remember the name or the site but I was wondering if anyone here might know of one.

I have tried guar gum(I think that is what it is). It was only good to thicken cold things if I remember right. Done it hot liquid it was nasty. I don't know of any decent thickening agent for phase one of south beach. Maybe someone else will chime in soon.

Can you try to use fat free half and half to cream your soup?

You know I can try the half and half but I was trying to stay away from too much dairy. I have Parathyroidism (a thyroid gland that regulates calcium levels, mine is on the fritz) and I need to be careful with that. Thank you for the suggestion,

Xanthan gum works in hot and cold stuff.
Just a little goes a long way though. I put mine in a shaker , because you really only need a bit. You can buy it online or in whole foods markets or specialty store.

Xanthan gum is used as a thickener in sauces, as an agent in ice cream that prevents ice crystals from forming, and as a fat substitute that adds the "mouth feel" of fat without the calories.

I did buy Bob's brand , but in a whole foods market...you might try grocery, if they sell Bob's red mill products.
My organic section of grocery sell their products, but not the xanthan gum.
Better to find it locally, so you don't have to pay shipping.
