I am going to PF Chang's in a bit and have looked on their website and about freaked out. Even w/o rice, there is nothing on there that is low on carbs. Does anyone have any advice??? Can I specify how I can order without all the sugar?

Maybe the salt and pepper prawns? Black beans seem like a better source of carbs (high fiber) than some of the other options that have high cornstarch and sugar. Watch the salt intake though... you may gain water weight for a few days no matter what you do, but you'll drop it again after another few days.

I think you just have to admit defeat if you are going to eat out at a place like that. You have to resign yourself to the fact that they cook with a ton of salt and a lot of sugar too. Have the meal if you can't change where you are going to eat, but be prepared for what the scale is going to tell you the next day, and don't let it de-rail you, make sure you drink a ton of water for the following few days and whatever gain you do have will flush away again.
good luck!
