Sorry, someone asked a few days ago how to make these, and I can't remember where I saw the post, so here goes!
To make about 12 cups, here's what you'll need:
6 - 8 eggs (depending on their size)
half a cup of skimmed milk
LF cheese, or some LF cream cheese (you can add in the amount you want)
then I usually sautee off some veggies to put in mine, chopped spinach, onions, mushrooms....anything which cuts up small for sauteeing is good.
Get a muffin tin with 12 holes, spray each hole with a little oil, put in a little of the veggie mix in the bottom of each one, then combine the eggs, cheese and milk together with some seasoning, and pour carefully into each cup.
Bake in the oven at 350 for 20 minutes (test to see if they are ready by sticking a knife in the centre of one to see if it comes out almost clean) cook for a further 5 minutes if needed.
Take out of the oven and carefully remove each one, putting it on some absorbant paper. I usuallly take them out with a desert spoon so I don't mess them up.
You can eat them warm (great for reheating in the microwave) or cold with salad!
2 is a serving, so I usually have them for breakfast or with a salad for lunch.
