Hi Pam,
I'm still working on a decent sauce. It tastes good, but it's too runny. It's so hard to make thick yummy sauces without cornstarch!
I sauteed a big bag of scallops and a bag of shrimp and added a big bag of frozen cauliflower, garlic and about 1/2 an onion, and then added 1/3 cup of vegetable broth, about 3 rounded teaspoons of curry (I like it hot) and 1 can of light coconut milk.
We had this for dinner last night, and I'll probably get a few more lunches out of it. Tastes good... just too runny! So if I were to do it again, I would probably leave out the vegetable broth and just do the coconut milk. Really look at the labels for the coconut milk... the one I buy is organic, with only 1 carb per serving, and only 4 grams of fat. Regular is insanely fatty!

B: 2 eggs, 1 white, 2 slices cheese, coffee, water
snack: peanuts, baby carrots
L: sauteed chicken, carrots, water
snack: 1 c yogurt
