Use your preferred recipe but add a TBS or two (for a single serving of pancakes) of some sugar free pudding mix. It will make them so much fluffier and yummy.

I made the pancakes for the first time today at breakfast.
oh my god, they were awesome. I drizzled 1tbsp of the ED Smith sugar free maple syrup over the whole batch. That was more than enough because they don't absorb it like real pancakes.
I was getting really tired of a regular omelette every day.

How did you make your pancakes? A LC mix?

Katie, a nice recipe for pancakes, which I got here is;

1/4 c bake mix (atkins, carbquik, or ..?)
1/4 c flax meal
salt
1/2 tsp baking powder
1 egg
2 Tbs SF syrup (Da Vinci or Torani or ...?)
1 Tbs cream
1 Tbs oil

Mix together and cook by tablespoonsful on medium heat slowly. makes approx. 10 pancakes

I wish I remembered who posted it so I could give credit! It's really quite good!

This is the recipe I use:

2XL eggs
1 TBSP slenda (or 3 packets)
2 TBSP heavy whipping cream
1 tsp cinnamon
3 drops of vanilla
real butter

Mix ingredients in a bowl (scramble). Cook in generous amount of butter (or spray with PAM)
in a hot pan like an omelette. Turn over and cook other side. Fold and serve with butter on top.

Makes about 3 pancakes. I drizzle mine with 1tbsp of ED Smith sugar free maple syrup (7g carbs for 3tbsp)

glendarc - I found the origional of that recipie and gave it a try this morning, intending to add the pudding. Of course I forgot that last part.

I did a double batch because it was for myself and two kids. We ended up getting 3 healthy sized pancakes each. The texture and taste reminded me a lot of buckwheat or whole grain pancakes. The kids both cleaned thier plates.

Keep in mind that sugar free pudding mix has corn starch in it--a lot of it. That's what thickens it.
