This morning I felt like something different, but couldn't figure out what. I am also a traditionalist when it comes to breakfast so left overs typically don't look appitizing.

What I ended up doing was pulling out some left over spaghetti squash. I made it into a latke like dish and loved it.

1 cup cooked spaghetti squash
2 eggs
salt
pepper
garlic powder
butter
LC katchup

I mixed together the squash with eggs and seasonings. Then made 3 patties and fried them in a nonstick pan with cooking spray. When they came out I spread butter on them while still warm, then topped the stack with a small amount of LC katchup. It came out great. Very filling and a good way to get some added veggies into the meal.

Ohh now this sounds wonderful.. I plan to try this this week. Have you tried it with a lil shredded cheese mixed in yet??

Havn't tried it with cheese. Was trying to remember waaaay back to what I would normally do with potatoe pancakes. Had to look up a recipie online since it's been so many years since I had the darn things.

I think the cheese should be ok. Might just keep an eye on it to be sure the cheese doesn't melt to fast and try to seperate out or anything. If it doesn't work then you could probably easily sprinkle a little cheese on top of the pancake after you flip it and place a lid on top to get the cheese to melt over it.

I went with your idea and made a brunch of it.

1 lb ground chuck
2 large scallions, about 6 inchs
6 strips turkey bacon, cut into small peices
6 eggs
3 c. spaghetti squash
1/2 c. parm cheese, shredded
1/2 c. chedder cheese, shredded
4 oz sour cream
salt and pepper to taste

Brown ground chuck, scallions, and bacon then drain and put in large mixing bowl
add spaghetti squash to meat mixture.
mix eggs, sour cream, and parm. cheese season to taste and add to meat.
put in a 2 1/2 quart casserole and top with chedder cheese.

cook 350 degrees for 40 min until set

Yeild 8 servings at 4 carbs each.

I made this again for dinner tonight and subbed ground turkey for the beef and added another 1/2 cup of cheese.
I liked it better than the beef version.
