I caught an episode of "Good Eats" on Tivo with Alton Brown about butter.

Alton Brown goes to court to defend butter against a bad wrap brought on by "the dark agents of industry, media and the fat phobic public."

Although he makes high carb stuff with it, he does defend it as much healthier than margarine due to trans-fat. Catch it on the Food Network if you can. I have his episodes on doing a great roast saved, and it's well worth the watching.

Yeah! That's a good episode. :) I really enjoy that show. Sad thing is, most of the stuff he makes I can't eat anymore!

Absolutely, it's a lot of carby stuff he makes. His episodes on picking the right kinds of meats are good, though. He had a sandwich episode that showed how to mix baked/grilled veggies with cream cheese for a spread that would be great with celery or something.

KryasDad, did you see the episode of Good Eats the other day where he made gyros? He actually showed how to prepare the gyro meat! You could even make it using your oven. I love getting gyro meat on my salads, so this was a good one for me. He has a lot of great information. I just skip them if they're about candy or cocktails (two things that may get me into trouble, even if they're just on TV!)

that roasted veggie and cream cheese sandwich show was just on last night or the night before. i had seen it before, but i didn't catch what he did to the veggies before roasting them. the spread looked delish though. i also saw AB brine a turkey which was interesting. i love alton brown's show. i'd say it is the most interesting cooking show i've ever seen.

Alton Brown does a very entertaining show packed with great info, history, science...you name it! One of the better cooking shows for sure.

(Don't get me started on Rachel Ray and Emeril.......not my favorites!;) )

I think his one-hour special on salt, "The Rock We Eat," is one of the very best.

He's done some dishes that would be quite relevant to low-carbers. He did an episode on curing your own bacon, which I think would interest some people around here, and he did one on eggplant where he made eggplant pasta (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_17752,00.html).

I'm making the gyro meat today. It's one of my favorites things to eat along with tzatziki. Hope it comes out good. I love lamb meatballs or just braized paired with tzatziki with zero carb Greek yogurt cheese.

That eggplant past sounds good - I'll have to check that out.

Ysabella - that eggplant steak recipe sounds good too if you ditch the honey and maybe add a meaty tomato sauce and maybe some mozzarella. Thanks for the link.

Absolutely (I tivo all his shows). Made me want to try it. I have a huge deck I rebuilt when we bought this house, and one of my goals is a mondo grill and smoker. I'd love to have the rotissere he had, but I am guessing his budget is a bit higher than mine. :)

I really don't care for Emeril, but Alton Brown is entertaining even if you don't intend to make what he's making. Hell, I watched the donut show!

Hi Nancy. That episode was titled "Scrap Iron Chef". I love his show and have been watching it since 2001.

I made his gyro recipe today. I cut everything in half and made my own, fav. recipe of taztziki. I would recommend his gyro recipe - it came out great - add a salad and tzatziki made with LC greek yogurt and it's a pretty LC meal. I think I would add more garlic and less marjoram next time I make it but that's just a personal thing.

I love his shows too and tivo them as well. My kids even like them. I don't care if the subjects are too high in carbs, it's just entertaining to watch. I can't stand Emmril, but I think Rachel Ray's 30min meals are great.

I really wish I'd seen the Patechoux (no idea how to spell it) show BEFORE I found out I can't eat flour and milk. I would have loved to have made it once.

I just love AB's shows. I learn so much from them. I like that he explains some of the science behind cooking. Who knew that science could be fun? ;) Since I'm studying to become a chef, I watch most of his shows... I only miss the shows where there is a scheduling conflict.

And I can vouch that my kids enjoy that show so much. They even enjoy watching him on the American Iron Chef show... Which personally I find kind of silly.

I did like the episode where he made beef jerky using furnase filters. I'll have to try that out someday when it's a little warmer... -18C is not weather where you gladly leave a window open!

Follow up on a great show on cheese they put on last night (i'm a recent viewer so it may be a rerun). I have it tivo'd & saved. Alton made cheese "crackers" from melted parmesan on wax paper, and had a lot of other really great cheese advice, including a cheese soup that looked great. It wasn't low carb, but you could probably very the vegetables in it and find a thickener other than flour and be good to go.

Yum. Gonna make the mozarella "bowls" he made and fill em with good stuff, maybe a sausage/mushroom combo.

Off topic..

I like watching his show just because he is fun, and entertaining to watch, like how he opens up the oven door and the camera is on the inside of the oven looking out at him as if he is in the oven, he is very creative and makes me laugh.

Poor AB selling out to AHA.. Oh well. I love Alton, and besides Ina Garten, he is the only chef I actually enjoy watching. Rachel Ray and Emeril are way too loud for me, LOL.

Just when I thought this forum couldn't get any better :D ................................................I LOVE GOOD EATS!!!! When AB's show comes on I clear the room. My favorite thing that he says is........ BUSTED! LIKE BENJAMIN BUNNY! and OH BOTHER! At least I think thats what he saids. All I know is it's hilarious!! :lol: I just thought I would share that with all of you.

A friend of mine has a book he wrote about meat which is FANTASTIC, tons of stuff about the different cuts of beef and the science behiund the way meat cooks.
