Makes 2 servings

1 lb lean ground beef (0 carbs)
2 tbsp olice oil (0 carbs)
1/2 a small onion, chopped (2 ECC)
1/2 a medium eggplant (8 ECC)
1 tbsp tomatoe paste (1 ECC)
1 cup water
2 tbsp vinegar (optional)
Spices to taste

Slice the eggplant into fine slices, then cut slices into fine strands.

Saute onions in olive oil till transparent. Add ground beef, spices, vinegar and paste. Cook for 20 minutes, stirring occasionally.

Add water (use less than a cup for a moe consistant texture) and eggplants,. Bring to boil and stirr for 10 minutes.

Total ECC 11 grams
5.5 grams per serving

oh wa'il! i've got to try this one for sure!! is it easy to slice the eggplant into strands? it certainly sounds delicious!

Eggplant is extremely easy to cut. Just make sure to adjust the time you cook them to how thick you cut them, they can go too soft quickly.
