I bought 2 eggplants and cut them up to make this for dinner tonight:

However, I only ended up breading and using one of the eggplants. What on earth can I do with the other one that I cut up? I've never cooked eggplant before and don't even know any dishes that contain it except for eggplant parmesan (which is in the oven as I type) and baba ghanoush.

Help me, LC-ers! :help: :wave:

You could get a few other veggies and make a good ratatouille. I had a few ratatouilles lately and they are delicious! Another way to dress up the ratatouille would after cooking it, to put it in a dish and sprinkle it with cheese and bake until the cheese is bubbly and melted. Yum!!

George Stella has an awesome recipe for eggplant---its kind of like lasagna but with eggplant instead of the dreaded pasta!
You could also bake it or fry it--delish!
