In the Protein Power plan you can subtract the fiber grams from the total carbs in vegetables. They recommend 25 grams of carbs a day. Does this mean you're eating 25 grams a day of uncounted carbs? Or am I just totally confused?

No, hanna, they state that High carb diets have a recommendation of 25g of fiber a day. Because we do not eat the binding carbs that are found in flour, rice and breads 25g of fiber is not necessary when LCing. 10 - 15g of fiber should do fine. Fiber can be subtracted from your carb count because while it is a carbohydrate it cannot be apsorbed by the body; it passes right through. It doesnt effect insuling nor does it count toward your carb or calorie totals.

Sorry if I'm a bit thick but does this mean that if the product breakdown on the packet says Carbohydrates 10grams per serve and Fibre 5 grams per serve, it is actually only 5 grams that I am getting if I eat it?

Yes, Cali, that's what you can assume - UNLESS there is a disclaimer on the lable that fiber has already been discounted. This can be confusing - many manufacturers are removing the fiber count for you. When in doubt punch your product into the Hidden Carb Counter (Located under Low Carb Tools) and see what results you get.

If the product has 10g of carbs with 5g of fiber and it states on the lable that fiber has been removed from the count then the real carb count was 15g with 5g subtracted to give you and ECC of 10g.
