Well, yesterday I was thrilled to have found a non-artificial 0 calorie sweetener, and today I read that stevia stimulates the pancreas to produce insulin. Other sites say that stevia does not influence insulin levels.

Can someone please point me to some serious research on this topic?

I think you're confusing insulin spike with insulin response. Stevia improves insulin response: naturally regulates pancreatic response so that the correct amount--not too much insulin is released and the spike/crash does not occur.

Stevia is so sweet that the amount used is trivial.

I feel much better about it now. You're right about the amount, too, I'd use nowhere near a gram to sweeten a bit of cream.
