I question the "low carb" bake mixes. They have to be a grain and therefore just as much a carbohydrate as flour, no?. Also, how can you have maple syrup on these pancakes?

The Maple syrup would be a lowcarb artifical syrup. Atkins makes one with hardly any carbs. It's actually quite good. I have only been able to get the one bottle though because I haven't been back anywhere to buy one, as they don't sell it locally. E.D. Smith also make a "sugar free" syrup, BUT it has 7.4 carbs for 3 tblsp.

Sorbee make syrups made with Splenda as well. I know Blueberry, Strawberry and Chocolate are available, but I'm not sure about Maple Syrup. I have a bottle of Strawberry and it has 2 gram carbs for 2 tbsp. Actually, with syrup a little goes a long way.
