Does anyone know if a fruit salad made with fruit cocktail, unsweetened coconut, and heavy whipping cream whipped with splenda would be a feasible desert for someone on maintanance or is it one of those things that really cannot be converted to low carb?

Depends on if there is sugar in the fruit salad. I don't think there's ever any use for sugar, maintenance or not.
With fruit salad either home made or canned in juice, then drained, why not?

I am of the same thought island girl, I really believe sugar is as dangeous for me as smoking or any drug. I was just wondering if all fruits were going to be acceptable again one day or if some were too high in natural sugars. I heard from one friend who is in maintanence that she cannot even touch a banana, so I was wondering if that was case specific or a universal thing.

Banana's are very high carb.
Many fruits however can slowly be added even before starting maintanance. Have you read the OWL secons of Atkins?
Fresh berries are one of first fruits to be added back in and they can make wonderful parfets. Rhubarb is even allowed on induction and can be cooked to make yummy sauces.
In later OWL peaches and pears can be added, as well as plums. All things depend on your tolerence level.
Moderate carb and low GI fruits can carry alot of nutrition, so they are a much better choice to add in then grains and other moderate carb items sometimes. It's one of those things you'll have to test your own reactions.

Yep, I have read the whole book. I think it is just going to be one of those, "your results may vary" type things and I will learn what my body can take as I go along!

Just wanted to add that this summer I had a "ginger stone fruit salad" that was magically delicious. Cubed peaches and nectarines that had been sprinkled with powdered ginger and a little water, tossed together, and left to "marinate". I never would have thought of putting ginger on fruit, but it was great. Carby, but great!

Besides, I rather lean to the seasonal and local, meaning bananas are out anyway... :lol: I certainly don't live in the tropics. Never mind that bananas we see today are a world away (way bigger, way sweeter) from the originals, and "we" certainly didn't have year round access to such stuff until the last 40 years or so. Heck, oranges used to be a Christmas treat!
Then there's the whole craving thing (maybe your friend has this issue). I cannot eat anything that sweet without setting off a truckload of cravings for sweets that I will be dealing with all day. Other people I know get major sugar spikes with that many carbs (reactive hypoglycemia, diabetes - diagnosed or not, etc.).
Enough ranting. If you lean to making fruit salad out of, say, North American temperate clime fruits, in season, you will never have to deal with the dreaded banana. And yes, they are pretty much at the top of the list for the killer carb shot. I classify them as a semi-universal no-no, okay for the VERY occasional treat, like once a year maybe, on maintenance, IF you haven't got any blood sugar issues. LOTS of better choices for more flavour and more nutrition.
Besides, I've never much thought the banana was a standard fruit salad item; ambrosia maybe, but not fruit salad ;).

If you were intent on using canned fruit, I would go with the carb selection canned peaches or pears (whatever del monte makes). I am not sure if that comes in fruit cocktail.
You might want to try it with fresh fruits instead, so you can control the content, especially where the pineapple is concerned (isn't that one of the fruit cocktail fruits?).
