I just made this tonight. It was super easy to make and it was just like Olive Garden's dip. Even my non-LC'r friends loved it!

Ingredients:
1 cup canned artichoke hearts - drain and chop
1/2 cup frozen spinach - thaw, drain and chop
8 oz package cream cheese
1/2 cup grated parmesan cheese (I used fresh shredded and then crumbled it up).
1/2 tsp crushed red pepper flakes
1/2 tsp salt
1/4 tsp garlic
1/8 tsp black pepper

Prepare:
Boil spinach and artichoke until tender. Drain.
Microwave cream cheese for 1 minute.
Combine with spinach and artichoke. Add remaining ingredients and mix well.
Bake in oven for 350 degrees for 15 minutes.
Optional: Finish off with the broiler to brown the edges.

Total recipe: 1090 Cals, 98g fat, 15g carbs (5 Fiber), 45g protein
1/4 serving: 273 cals, 25g fat, 4 carbs (1 fiber), 11 protein.

I served w/celery sticks and some wasa rye crispbreads. Next time I plan to add some diced tomato on top.
