6 tilapia fillets
2 eggs beaten
1 Tablespoon water
1/4 cup unsalted butter melted
1/2 teaspoon paprika
1/2 prepared LC bread crumbs (we used brbq flavored pork rind crumbs here)
1/2 grated parmesan cheese
Preheat oven to 375.
1. Rinse and dry tilapia fillets
2. Mix the two eggs with 1 Tlbs water in a bowl.
3. Combine butter with LC bread crumbs, or ( finely ground pork rinds) parmesan cheese and paprika and set aside.
4. Dip tilapia fillets in egg mixture then lightly coat with bread crumb mixture. 5. place in greased glass pan cook at 375 12-15 minutes or until cooked through do not over cook.
Hubby added the pork rinds to the egg mixture instead of to the dry mixture before i could stop him but it was good and close to long john silvers. Let me know how it tastes made the right way. Grin.
Recipe can serve six people but since tilapia is so low calorie and has no carbs it serves two adults and two children in our house. :yum:
