Found this and thought I'd pass it on... it's the World Championship Chili Cookoff prize winner for this year! Makes 3 quarts (and the nutrition info is for 3 quarts!).

Macktown Chili

Amount - Measure - Ingredient -- Preparation Method

3 pounds beef tip round -- "tri-tip", cubed
14 fluid ounces beef broth, canned
14 fluid ounces chicken broth, canned
8 fluid ounces tomato sauce
1 teaspoon tabasco sauce
salt -- to taste
SPICE MIX:
8 tablespoons mild chili powder
2 tablespoons hot chili powder
3 tablespoons cumin
1 tablespoon garlic granules
1 tablespoon onion granules
1/2 tablespoon arrowroot -- optional

Brown meat; drain and add to pot with broths and tomatoe sauce.

Stir together ingredients for Spice Mix in a small bowl.

Add 75% of spice mix to pot with meat and sauce; bring to boil; simmer 2 hours.

Add Tabasco and remaining spices; cook half hour more or until meat is tender. Add salt to taste.

Are you sure? 83 grams of carbs per serving?

I think in this case the "per serving" refers to the Mastercook analysis of the entire recipe.

84.3 carbs minus 32g fiber would be 52.3g ECC for the whole thing ... I'd say from the quantity of meat, 8 to 10 servings, so 6.5 to 5.2g ECC per individual serving.

I shudder to think of the bodily reactions to 3 entire Quarts of this meaty beanless chili, Tamarian ! :lol:

American Quarts = 2 American Pints which each = 2 Cups (8 Fluid Ounces)
... so 3 Quarts X 2 Pints X 2 Cups = 12 1-Cup servings or 8 large 1.5-Cup servings

Total 83 minus 32 = 51 ECC
- 51 ECC / 08 = 6.4
- 51 ECC / 12 = 4.3

Doreen's estimate is excellent... as always.

PS: leave out the arrowroot thickener (I would, and just let it simmer down a bit further in the first stage) and carb count would be a tad lower still.

PPS: COULD of course {evil grin :devil:} substitute Expert Foods' not/Starch for the arrowroot, and get soluble fiber carbs {very good for you} instead....

I made up a batch of this tonight! It was the BEST chili I have ever had. And now I have lunch for the next 3-4 days. Nice one!

Would this work OK in the crockpot??? My family loves crockpot stew, and this sounds like it would be great. I never brown the stewmeat when I make stew, but I would probably do it for this recipe.

It's cooking as we speak!! Didn't brown the meat. Dumped it all in the crockpot about 9 this morning, and will let it go on high until suppertime. Will report the results.

This turned out great in the crock pot. It was very liquid, but I discarded most of the liquid after we ate. The meat was so very tender, and tasted exactly like chili. My stew is never quite that tender, but then it usually doens't have the amount of liquid this had. Go for it folks!!! This would be great with "cauliflower rice"

For the chicken and beef broth, i have found that all the broth's I buy are concentrated and say on the can to add 1 can of water. Is this something to consider?

You bet it's something to consider.

The broth in the recipe is not listed as condensed, and the broth you are finding sounds condensed. So you should use the measure in the recipe after you have done whatever you need to do as the package suggests.

That's odd though. I see broths all the time that are not condensed, usually in a tetrapack. Actually, they're usually labelled stock, like beef stock or chicken stock or veg stock...so that's probably what you need to look for, is the packaged stock. I would.
