Grill a piece of salmon (we do ours wrapped in foil, with butter, green onions, Italian seasoning, salt and pepper).
Meanwhile:
saute cut-up mushrooms, as many as you like, in butter -- add Italian seasoning.
Add 1/4 cup red wine (didn't have any marsala) + 1 pkt of Splenda.
Reduce until almost no liquid.
Add cream until you have the amount of liquid you want (perhaps 1/2 cup), then heat.
Flash-fry a bunch of baby spinach, using a little butter (you have to do this FAST!).
Place spinach on each plate, piece of salmon on top, then spoon the sauce over.
