I love Squash since lo-carbing. It is like my favorite veggie now. I was hungry, and this stuff tasted so good, now I make it all the time.
Italian Squash saute
1 small yellow squash
1 small green squash
1 tbsp butter
4 oz Purdue short cuts Italian chicken strips, (or you can make your own homemade)
3 oz parmesan cheese (the real, hard grated, not sprinkle stuff)
Salt and pepper to taste.
Wash and cut squash into half-moon's, about 1/4" think, leaving the skin on. Melt butter in skillet, and add cut-up squash when butter is melted. Sauté squash for 3-4 min until tender. Add chicken, and heat thru, an additional 1-2 min. Serve immediately, with the parmesan on top.
