I'm hearing that maybe I should be cutting back on cheese if I'm not seeing results. I thought cheese was carb free! During the first two weeks of Atkins, that was practically all I ate. Are there certain cheeses I should be avoiding?
Take away my bread, my pasta and my rice, but please, not my cheese!!!

You can eat cheese but understand some cheeses have carbs. Read the packages. Count them as your carb alotment and you'll be fine. I actually have cheese as a dessert once or twice a week.
(I can't eat alot.. intolerant to the protein of milk  )
I think if there is a low carb thing you love, have it but keep track of it. My two cents. :)

Cheese is a bummer for me. I love it, as much as my bread and noodles, but gave it up some, due to constipation. After giving it up, the pounds started to come off faster, so it must have been just enough to hold me back.

Cheese is not carb free, although Atkin's lists it as a "free food". The idea is that if you're watching all your carbs and keeping them below 20g then the few in cheese wont hurt much. (Btw, coffee and cream are also not carb free). If you're having problems losing then it is wise to look to certain known stallers; cheese, coffee, dairy in general, nuts.

As with all things, moderation should prevail. It is generally accepted that 4oz of cheese a day is a good limit (even Dr. Atkins' center recommends). Fatter (this applies to all dairy) means less carbs, so Havarti and Guyer would be lower in carbs than Cheddar. The more buttery or creamy the lower carb. This is true too for creams (choose whipping or heavy over 1/2 and 1/2).
