1 can beef broth or stock
dash dried italian seasoning
1 tsp. minced shallot
1 cloved miced garlic
1/2 onion halved, then sliced
1 C. sliced mushrooms
1/2 lb sliced deli roast beef
2 slices provolone cheese
1 T. butter
S & P to taste

Saute mushrooms till tender, add onions & shallot first, garlic last so it doesn't burn & turn bitter. Pour in broth, spices, and simmer for 5 to 10 min..
Divide meat into two bowls, pour hot broth mixture over meat. Place slice of cheese on each, Broil or microwave to melt.

Eat and enjoy!
